Have you ever tried substituting whole wheat flour for the white flour? Thoughts?

You know, I haven't (but the funny thing is I almos did it this time, but there were too many kids waiting on these), but I don't see why you couldn't. I would start with 1/2 whole wheat, 1/2 white. Even better, use whole wheat pastry flour or white whole wheat flour.
But then again, I think why mess with these. Given I only make sugar cookies once or twice a year, let the kids have some processed food. I use whole wheat on most other baking anyway. Plus, all the good is undone by that frosting anyway :-)

I should give it a try soon though...soon.
